What does Specialty coffee mean??<\/h3>\n

It is a coffee of superior quality, cultivated, cared for and harvested in a traditional way, handmade, a flawless coffee, and in most cases the species used is the Arabica. These are coffees with organoleptic properties which are different from the robusta ones and more pleasant to the palate. The coffee is tasted and graded by Q graders. There must be at least three and they must not differ by more than 2 points from each other, giving it a score beyond 80 points on the SCA scale.<\/p>\n

The 100% \u201cfrom tree to cup\u201d artisan process, based on a philosophy of care for the product, organic farming and sustainable production techniques, as well as concern for the environment, is what makes all the difference regarding these up-market special coffees.<\/p>\n

Not all coffee growers can produce specialty coffee and therefore, each of these coffees is authentic and unique, and has a story behind it. They are seasonal coffees, produced by smallholder farmers who grow their varietal coffee in a specific region, at a specific altitude and under specific soil, temperature and humidity conditions. The farmers harvest the coffee by hand, selecting the berries that have reached their optimum ripeness point, and during the pulping process, they carry out yet another selection, of coffee beans this time, to discard the defective ones.<\/p>\n

Our product is pampered to the highest level, every detail is taken care of throughout the process, and strict traceability of each of the beans that make up the coffee is applied. As a result, we obtain unique coffees to which we apply a personalised, artisan roasting process, adapted for each coffee profile, as we seek to highlight its characteristics.<\/p>\n

To obtain the category of speciality coffee, professional tasters certified by the SCA (Specialty Coffee Association) carry out tastings in which they evaluate and grade the individual characteristics of each coffee, and only those that achieve a score of over 80\/100 points are awarded the category of speciality coffee.<\/p>\n

WHAT DOES A BLEND OFFER TO US?<\/h3>\n

A coffee that is stable over time, more balanced and desirable to the majority of the public. Each origin provides nuances that, once combined, give us a more rounded and balanced cup, even being speciality coffees. We must understand that these are going to be less bitter coffees, in fact, acidity and sweetness will predominate. The level of acidity is not as high as in single varietals (Kenya, etc.) as we are looking for a more balanced cup.<\/p>\n
