What is Acidity?

It is a key factor when ordering or making a coffee. The degree of acidity is a characteristic that is noted on the tip and sides of your tongue. Normally, the greater the acidity, the better the quality of the coffee. Coffee may contain citric acid, phosphoric, acetic or malic acid, tartaric or chemical acid, each one has a special flavour and influences the final result of the coffee in a different way.
